Gourmet Fresh Spring Rolls

Ingredients

  • Killer B’s Habanero Sweet and Heat Wing Sauce
  • 1 package of spring roll rice wrappers (available in the Asian foods section of your local grocery store)
  • 1 package of vermicelli rice noodles (also found in the Asian foods section)
  • 2 ripe mangos, peeled and thinly sliced
  • 1 large carrot, peeled and either shredded or thinly sliced
  • 1 large English cucumber, peeled and thinly sliced
  • 1 pound of small, cooked shrimp, deveined and tails removed (chicken can be used as a substitute)
  • 1 bunch of fresh mint leaves
  • 1 bunch of fresh basil leaves
  • 1 bunch of fresh cilantro

Directions

  1. Cook the vermicelli noodles in boiling water for a few minutes, following the package instructions. Once cooked, drain and rinse with cold water.
  2. Prepare all the topping ingredients, including the chopped vegetables, herbs, and cooked shrimp.
  3. Fill a large, deep dish or pie pan with about 1 inch of water. Soak one rice wrapper in the water for 10-15 seconds. It should still feel firm when you remove it and place it on your counter or plate. (Note: The wrapper will soften as you add the filling. If soaked for too long, it may become too soft and tear during the rolling process.)
  4. On the third of the spring roll wrapper closest to you, layer 1-2 slices of each vegetable, a few shrimp, a few leaves of each herb, and a pinch of noodles.
  5. Fold the sides of the spring roll wrapper over the ingredients. Then, pull the side closest to you up and over the ingredients, sealing everything together tightly, similar to rolling a burrito.
  6. Dip your gourmet spring roll in Killer B’s Habanero Sweet and Heat sauce for an extra kick, and enjoy!
