Gourmet Fresh Spring Rolls
Ingredients
- Killer B’s Habanero Sweet and Heat Wing Sauce
- 1 package of spring roll rice wrappers (available in the Asian foods section of your local grocery store)
- 1 package of vermicelli rice noodles (also found in the Asian foods section)
- 2 ripe mangos, peeled and thinly sliced
- 1 large carrot, peeled and either shredded or thinly sliced
- 1 large English cucumber, peeled and thinly sliced
- 1 pound of small, cooked shrimp, deveined and tails removed (chicken can be used as a substitute)
- 1 bunch of fresh mint leaves
- 1 bunch of fresh basil leaves
- 1 bunch of fresh cilantro
Directions
- Cook the vermicelli noodles in boiling water for a few minutes, following the package instructions. Once cooked, drain and rinse with cold water.
- Prepare all the topping ingredients, including the chopped vegetables, herbs, and cooked shrimp.
- Fill a large, deep dish or pie pan with about 1 inch of water. Soak one rice wrapper in the water for 10-15 seconds. It should still feel firm when you remove it and place it on your counter or plate. (Note: The wrapper will soften as you add the filling. If soaked for too long, it may become too soft and tear during the rolling process.)
- On the third of the spring roll wrapper closest to you, layer 1-2 slices of each vegetable, a few shrimp, a few leaves of each herb, and a pinch of noodles.
- Fold the sides of the spring roll wrapper over the ingredients. Then, pull the side closest to you up and over the ingredients, sealing everything together tightly, similar to rolling a burrito.
